Chocolate Protein Ice Cream | Healthy Treats
This chocolate protein ice cream is full of all natural ingredients. Use dates to sweeten this one. Substitute stevia if you want to reduce the sugar content. The dates provide the majority of carbs in this recipe. So if you exchange stevia for the sweetener, you’ll make this more keto-friendly/low carb.
Load your ice cream as you make it with extras like nut butter or to include carbs you can add chopped banana or frozen raspberries. Double the chocolate with sugar-free chocolate chips.
You need ice cream molds for this recipe. I got mine from Amazon.
Ingredients for Ice Cream:
- ½ cup raw cashews
- ½ cup medjool dates
- 1 can lite coconut milk
- 2 scoops Flipping 50 Plant Power
- 1 ½ cups water
- 1-2 T cacao powder
- 1 tsp vanilla extract
Instructions for Easy Cream:Â
Begin by combining the Medjool dates and raw cashews together in a bowl with 1 ½ cups of filtered water. Place in the fridge to soak for at least 4 hours, overnight is best. Ensure that your ice cream bowl is in the freezer at this point (if using).
Once the cashews and dates are soft, add them along with the water to a high-speed blender.
Pour the base into ice cream molds, freeze overnight, then add to the blender with unsweetened coconut milk and blend until a creamy texture has been achieved.
You can either enjoy the protein ice cream immediately with a soft serve consistency or add it to an ice cream container and freeze it again. Scoop with an ice cream scoop and enjoy!
About Ingredients:
Raw Cacao is full of antioxidants and chocolate contains magnesium.
Coconut milk is rich in Medium Chain Triglycerides (MCT). That is, fat that helps create energy and is not easily stored as fat.
The fat content is necessary to make it creamy. Especially when you freeze it. If you’re trying to keep it light, you can try substituting almond milk for the coconut milk, just know if you refreeze it will be more “icy” than smooth and creamy.
