I’m Playing Hooky This Week…
So While I’m Away I’ve pulled a few favorite recipes out of the files for you. In all seriousness, I’m watching my son play golf. So bear with me as I insert a collection of my favorites here for you. Are you a soup person? I’m a soup person. I recently shared what’s soon to be a new favorite for me – Coconut Chicken Chowder and it got me thinking about mixing up some soups for lunches and the freezer on those cold days that sneak up unexpectedly.
This Butternut Squash soup is hard to believe.
No cream, not even a cream substitute (e.g.coconut milk). You could add it, however, to get healthy fat. I use unflavored protein powder (and have been known to use a pumpkin protein powder) to boost the protein content and make a light dinner meal on a cold night.
This Kale and Turkey Chili is a fall and winter favorite.
I’ve made it with bison, ground meat, ground chicken and ground turkey. I’ve made it without dark beer and it’s wonderful any way you spin it. What I wouldn’t do is skip the veggies. The spoonfuls of sliced zucchini, shredded carrots, and kale make it a hearty, chunky and one-bowl meal.
This Crab Salad recipe is simple and delightful.
Serve it in endive, romaine lettuce wraps, or atop mixed salad greens.
I’ve tried a couple new crusts since I added this one for Pi Day ’14 and I need to get them in. The new ones are experiments in using almond flour and one is dairy free. I’ve discovered that Super Target carries bags of already “riced” cauliflower that you can safely microwave in the bag. That cuts the work of this in half! The food processor, microwave in bowl and transfer to drain… gone, poof! I like easy AND good. I top with black bean sauce and shrimp or pesto, spinach and chicken… love new flavors.
